A Touch of Avocado
I thought I'd welcome myself back after an extended absence (hard times, gentle reader, temporarily befell me) with a short post about the gracious act of bringing a tupperware lunch to work. On top of dealing with a more than heart wrenching situation over the past 2 months I was also snaking my way underground on the smelly Toronto TTC to work which was high in a tower full of enterprising but rather frat-boyish bankers and money wranglers. Not a welcome situation after my time as a river rat this summer. One joyous aspect of this tedious temporary existence was making my lunch every morning. After drinking a cup of Roobios tea and eating a grapefruit I'd get to work scouring my cupboards and fridge looking for anything that was salad worthy.
Here's a list of things that I find salad worthy:
hard boiled eggs
specialty cans of tuna
walnuts, sunflower seeds, poppyseeds or flax meal avocados, tomatoes, cucumbers, radicchio, lettuces of all sorts, cabbages, grated carrots, chopped spinach, red onion, green onion, steamed broccoli, fried tofu, cooked lentils, cooked rice, black beans, garbanzo beans, small white beans, grated daikon radish, any grain like bulgar or couscous
feta cheese, blue cheese, fresh parmesan or any other hard salty crumbly cheese
The above salad was layered with dark leafy spinach, chopped iceberg lettuce, chopped radicchio, thinly sliced green cabbage, thinly sliced red onion, fresh thyme, chopped tomatoes, chopped avocado and crumbled Bulgarian feta. Then I splashed coarse salt over top and ground chunks of pepper. I made a quick dressing of red wine vinegar, rice vinegar and a fruity olive oil.
While working downtown, my favourite lunchtime habit was to take my tupperware to St Lawrence Market sit on stools watching the world come and go and then browse and buy dinner afterward while sipping tea and eating a cookie!




isn't it great knowing during a crappy day at the cubicle farm that a great treat awaits you. A bit of salvation in an otherwise bland day.

If only a large office was really like a "farm"! By "cubicle", Jo, I take it you mean an open concept office. While don't work now, I made the most incredible stuff happen from my "cubicle" when I did work - it was never bland. I am willing to bet that Daphne does not have her heart in commercial banking; it wouldn't matter if the office was set on the banks of the Avon; It's the activity, not the setting.
