Mango and Avocado Salad with Cracked Sicilian Olives and Slivered Radishes

Please. Make this simple salad and take it to work and be the envy of all your colleagues. It's worth it. The combination of flavours - sweet avocado, slightly tart unripe mango, salty feta, smoked sea salt, the subtle sharpness of finely sliced radishes, a touch of heat from a hot pepper, and the brinyness of green olives - is INCREDIBLE.

I'm not really one for overtly imposing flavours. This salad sounds like mayhem and you'd think everything in it contradicted one another but remarkably it doesn't, it's the opposite. You may not like the screechiness of the fiddle but place a violin in an orchestra and the sound becomes soothing. Or picture a roomful of slightly aggressive personalities all shouting over one another until they drown each other out and all you hear is an echo, a faint hum. Such is the beauty of this salad.**

I made this salad for the next day's lunch as I was preparing that night's dinner. I piled the colourful array onto this plate, tried to capture its visual essence, and then slid everything into a large tupperware on top of a bed of torn escarole leaves (my new favourite hardy winter lettuce - a endive-ish taste to the shiny leaves, and a more interesting flavour than your typical red leaf/romaine).

Before I get to the recipe/ingredients, I'll add that I have certain ingredients on hand because when I shop on Saturday I look forward to the week of meals - lunches and dinners mainly - and create a list of items that will serve me quadrupely over. So, if I buy fresh mint or cilantro, it's because I know I will make 3 different things that'll use up all of it. If I buy avocados, I know I have a short shelf life and need to plan to incorporate them into something. And when a recipe, such as this, calls for unripe mango, well, it simply can't go sitting in your fruit bowl for more than a day or two, or else, you know, brown spots, effervescence, a musky smell, and then it's a waste, and that's so not the point.

I like to create recipes that anyone can make with the most accessible of ingredients. This is no different. Nothing is hard to find. There are no difficult tasks at hand. The most I ask of you is to slice an avocado and pit it.

Loose directions:

Slice, chop or grate a few red radishes
Add some fairly unripe cubes of fresh mango
Use up a just ripe avocado
Squeeze a lime over top
Sprinkle sea salt - in my case a smoked salish salt tasting like wood fire
Toss in some fresh herbs - cilantro or mint or parsley
Throw a few brined olives, in my case Sicilian green olives
Add a hotness. I used half of a hot green pepper and minced it finely
Toss in some salty cheese if you like, I used feta but halloum or a bit of crumbled goat cheese would be good too
Then add the body of the salad, in my case I chopped up a bit of radicchio and layered everything over torn escarole leaves
Season with really good olive oil and more lime juice/balsamic vinegar/white wine vinegar/balsamic raspberry vinegar, but just a bit, just a touch to get a balancing act.

**Now I know, nobody really eats radishes. They are too strong raw. It's hard to know what to do with them but match the with a creamy sour tzatziki if only to dull their flavour. But they are so pretty and in an effort to incorporate them into the world, I'm trying to find new ways to include them but sort of peripherally. And when you cut them finely, they lose their sting and truly become team players.

I know, Dawn - I totally agree! I think it's b/c the mango is unripe, rather than the saturated sweet they can get when they soften, but the combination ended up being magical. The radishes were finely sliced and there was no 'heat' from them instead they added a crisp sparity. The idea of radishes with mango came from a Mark Bittman (the minimalist, new york times columnist) and his 101 recipes for simple salads. He suggested kohlrabi or jicama (another kind of radish) with green mango and cilantro and lime, I just evolved the recipe.
